Cultivating nature in the city.

We bring the forest floor indoors. Our urban farm is a modern, climate-controlled environment dedicated to growing premium gourmet mushrooms year-round, ensuring unparalleled freshness and deep, earthy flavors.

A Vision for Local Agriculture

The journey of Spore & Stem began with a simple observation: specialty mushrooms often travel hundreds of miles before reaching a kitchen, losing their delicate textures and nuanced flavors along the way. We wanted to change that by building an agricultural space right where the food is prepared and enjoyed.

By growing indoors, we completely remove the unpredictability of seasonal weather. We can focus entirely on providing the absolute best growing conditions for our crops, delivering consistent, chef-quality harvests every single week.

Precision Climate Control

Gourmet mushrooms are incredibly sensitive to their environment. Our modern cultivation rooms mimic the natural autumn conditions of a dense forest floor, carefully managed by modern sensors.

Temperature

Each mushroom variety has a specific fruiting temperature. We maintain dedicated rooms that never fluctuate, ensuring steady, strong growth.

Humidity

Mushrooms breathe moisture. Our ultrasonic humidifiers maintain a precise fog, providing the heavy moisture required for large, fleshy caps.

Air Exchange

Fresh air is vital to prevent leggy, misshapen stems. We constantly cycle fresh, filtered air through our fruiting chambers to mimic a gentle breeze.

A Circular Process

Urban farming is about more than just proximity; it is about reducing waste. We focus on sustainable practices from the very start of the mushroom lifecycle through to the final harvest.

Renewable Substrate

Our mushrooms grow on a carefully balanced mix of local hardwood sawdust and agricultural byproducts. We do not use harsh chemicals or artificial fertilizers.

Composting the Blocks

Once a block has finished producing mushrooms, it becomes incredibly rich compost. We ensure these spent blocks are returned to the earth to enrich local soil.

From Spore to Stem

Take a look inside the distinct zones of our facility, where each stage of the lifecycle requires complete focus and strict environmental boundaries.

The Clean Room

Where sterilized substrate blocks are carefully inoculated with premium mushroom culture in a fully sterile environment.

Incubation

Blocks rest in a warm, dark space for several weeks as the white mycelium slowly colonizes the wood material.

The Fruiting Chamber

Exposed to fresh air, high humidity, and specialized lighting, the mycelium bursts into beautiful, edible mushrooms.
