Handling & Preparation

Gourmet mushrooms are delicate and require proper care to maintain their integrity from farm to pan. Because they act like sponges, exposing them to excess moisture before cooking will compromise their texture and dilute their profound flavors.

Optimal Storage

Keep fresh mushrooms in a breathable paper bag in the main compartment of your refrigerator, not the crisper drawer. Plastic traps moisture, which accelerates degradation. Used correctly, our fresh harvest will keep beautifully for 7 to 10 days.

Prep Without Water

Avoid washing gourmet mushrooms under the tap. Instead, use a dry pastry brush or a very lightly damp paper towel to gently brush away any stray substrate. For cooking, tearing varieties like Oyster or Lion's Mane by hand preserves their natural fibrous structure better than chopping.
